Green Grits & Sausage

Green Grits & Sausage

3/4 pound green beans, trimmed
1 lb fresh sausage
1 cup grits
1/2 teaspoon salt
2 cloves garlic, pressed
1/2 cup finely grated Parmesan cheese

Bring 3 quarts water and 1 teaspoon salt to boil in large pot. Add beans and cook for 4 minutes. Remove to ice & water bath to arrest cooking. Drain and pulse in food processor until finely minced (almost a paste).

Sauté sausage in skillet over medium heat until firm, about 5-10 minutes, then drain on paper towels. When cool enough to handle, cut into slices. Return skillet to medium-high heat until smoking, then add sausage slices and sauté until well browned.

While sausage is cooking, bring 4-1/2 cups water to boil in large pot and add salt. Slowly whisk in grits. Reduce heat to low and simmer, stirring often, until thickened, about 12-14 minutes. Add cheese, garlic, & sausage and continue to stir until hot, about 2-3 minutes. Add green bean paste, stir for 1-2 minutes, taste for salt and serve.
