Meat Loaf with Greek Flavors
serves 8

10 oz ground pork
10 oz ground veal
1-1/2 lb ground lamb
2 eggs
1-1/2 cups coarse bread crumbs
1/2 cup finely grated Parmesan cheese
2 tablespoons oregano
1 teaspoon fennel seeds
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon freshly ground pepper

4 oz feta cheese, cut into 1-inch logs
1 large tomato, sliced 1/2 inch
1/4 lb bacon, cut into 5-inch slices

Combine meats, eggs, bread crumbs, cheese, and spices in large bowl and mix gently with your hands. Shape meat mixture into loaf and place on broiler pan. Carefully form lengthwise furrow in loaf by pulling top apart with your fingers. Place feta into furrow and reform loaf. Arrange tomato slices, then bacon slices along top of loaf. Bake in 350º oven for 40 minutes, until interior temperature is 160º. Remove from oven and let sit for 10 minutes.
