Sausage Fried Rice


Yes, Virginia, you can make fried rice at home. And it can be just as good, maybe better, than at your favorite Chinese take-out. This one uses Italian sausage as a meat, but anything goes, including no meat.

Sausage Fried Rice
serves 6

1/4 cup peanut oil
1 medium onion, chopped
3 celery stalks, chopped
3 carrots, chopped
8 green onions, chopped
1 14-oz can straw mushrooms
1 lb Italian sausage, cooked & chopped (grilled is nice)
3 eggs, scrambled soft & chopped
4 cups cooked rice
4 cloves garlic, minced (about 3 teaspoons)
1/4 cup minced ginger
2 tablespoons black vinegar
2 tablespoons soy sauce
2 tablespoons oyster sauce
1/4 teaspoon chili oil
1/2 teaspoon toasted sesame oil

Heat peanut oil in wok over high heat. When almost smoking, add onion, celery, & carrots and cook, stirring, about 5 minutes. Add green onions, mushrooms & sausage and stir until hot, 1-2 minutes. Stir in eggs and rice, then add garlic & ginger and cook, stirring, until fragrant, about 3 minutes. Add remaining ingredients, stir, and cook until hot, about 2-3 minutes.
