Tomato Barbecue Sauce

Sure, there are dozens of choices if you want barbecue sauce from a bottle. But wouldn’t it be more fun if you made some yourself? And just think of all the chemicals you could leave out. I won’t promise that it’s any cheaper than any of the grocery store versions, but I will say this one is just as good if not better, and it tastes great on grilled chicken.  What are you waiting for?  Fire up that grill & get busy!  Great as a mopping sauce for ribs or brisket, too.

Tomato Barbecue Sauce
makes about 2 cups

1 pound fresh tomatoes
1/2 pound yellow onion, chopped
1 head garlic, cloves separated & peeled
1 apple, peeled & cored
1 jalapeño pepper, chopped
1 cup maple syrup
1 teaspoon liquid smoke
1 teaspoon salt
5 tablespoons apple cider vinegar
3 tablespoons olive oil

In food processor, purée tomatoes, onion, garlic, apple, & pepper. Bring to boil in medium saucepan over high heat, then reduce heat to low and simmer, uncovered, stirring occasionally, 2 hours. Add maple syrup, liquid smoke & salt, and simmer for another hour. Add vinegar & olive oil, then pour into blender and purée until smooth.  Return to saucepan and simmer for 10 minutes.
